Beneficial Bite of the Week!!!


Not only are lentils, “among the most versatile and nutritious foods available (mayo clinic)”, but they are also a great, nutritional source of folate, potassium, magnesium, iron and other phytonutrients. Not yet convinved of their awesomeness? Lentils are categorized as a low-fat, fiber-packed, protein source that contain no cholesterol! They are budget-friendly and store very well. Seriously though, they are easy to use as a meat-replacement in your recipes or simply as a means to nutritionally “bulk up” a soup, stew or side dish. Trust me, if you have not already used them in your cooking, they are definitely worth a try : )
