Meat(less)loaf

Yay for awesome new recipes!!! Especially those that honor the age-old, American tradition of making meatloaf…just without the meat 🙂 This one does not originate from yours truly, but another awesome blogger.

My modifications:
– I used less than 1/4 cup olive oil instead of 1/2 cup vegetable oil
– I used my own homemade breadcrumbs of the whole wheat variety (not panko)
– 10 mushrooms instead of 8
– You can use any BBQ sauce, but I use “Road Kill” all the way from Montana (I have an in- aka my grandparents)

But seriously, this new twist on an old comfort dish was absolutely delectable and soooo easy!!! It makes it fun to cook a meal at the end of a long work week. Paired with parsley sweet potatoes and roasted green beans, you have yourself a win! win! win! sista-sista Friday dinna.

Oh yes and for dessert: Chocolate Cherry Almond Brownies  ; )
