Whether you are slicing one up to put on a sandwich or stewing a few to make a wonderful sauce, you are adding a healthy addition to your plate. Tomatoes are a good source of vitamin C (protects our cells), folate, potassium (necessary electrolyte) and carotenoids (lycopene to be specific) and also happen to be very low in calories and essentially fat free. They are one of those foods that you always see in the produce section, so never fear, you can use them year round. I am sure most of you use them often, but it’s nice to know they serve a purpose other than bulking up your BLT.
