Brussels Sprouts
How I love these miniature looking cabbages! The benefits of incorporating them into your diet: they contain vitamins A and C (both function as antioxidants), fiber and folic acid (necessary for cell/tissue function and growth). I usually eat them roasted in the oven with a little olive oil, garlic and sea salt, but I have also dabbled in a delightful brussels sprout/sweet potato hash and was not disappointed in the least. Basically, it’s safe to say that these little cruciferous veggies are not only healthy, but versatile and quite appetizing.
